One doesn't expect a free piece of pie on the next visit. However one could expect a fresh cup of coffee and kept hot by frequent refills on the next visit. As one could expect a fresh and hot show if one tipped on the previous visit. It's nice to be remembered and tipping helps that happen. Aditional Comment:

A gift is given without expectation of anything in return else it's not a gift but barter. By Tipping and Gift Giving one gets remembered as someone special. Memories are short and will continue to tip and give gifts so as to not be forgotten or just another 'Got Another One!' regardless of your discouragement.
